Orientation & Core Standards: | This initial phase focuses on equipping participants with the foundational knowledge and essential skills required for success throughout the entire program. Trainees will be certified in all areas covered and are expected to consistently uphold these standards in every phase of their rotation. Emphasis is placed on ensuring the health and safety of both the participant and the guests of the hotel. | Organizational Development & Operational Readiness: | Participants will strengthen their organizational and planning abilities within a high-volume hospitality environment. They will also refine their production efficiency, timing, and plating techniques—skills that are essential in a dynamic, fast-paced catering and banquet setting. | Culinary Techniques & Execution: | Trainees will gain hands on experience in the preparation of buffet and plated salads, dressings, vegetables, soups, sauces, meats, fish, and hors d’oeuvres. They will learn to design and set up buffet stations and action stations, including live food preparation in front of guests. Emphasis is placed on mastering classical and contemporary plating styles while developing proficiency with the tools and utensils used by professional chefs. | Culinary Techniques & Execution: | Building upon the previous phase, trainees will continue developing their technical and creative culinary skills. They will further enhance their ability to execute refined presentations for both buffet and plated service, while continuing to work with a variety of proteins, sauces, and garnishes. Through repetition and feedback, participants will gain the confidence and consistency needed to contribute as valuable members of the culinary team.
