Culinary Kitchen Rotation: | We are excited to see you’re interested in Bluefin Bay Family of Resorts for your next position! | You will be trained and exposed to the preparatory stages of cooking, which varies according to stations (broiler, appetizer, entremetiere, grill, middle, expedite, breakfast, etc.) | Your tasks will include food presentations, seasoning, cold food innovation, plating and ingredient selections. | Be able to manage the kitchen and ensure compliance with all standards of best practices during food preparation – from raw materials, garnishing, seasoning, plating and finally presentation of finish product / menu plates. | You will also learn how to oversee catering events and be able to follow culinary instructions and demonstrate culinary techniques. | You will develop standard recipes and techniques for food preparation and presentation which help assure consistently high quality and to minimize costs; exercises portion control for all items served and assists in establishing menu selling price.
